The kitchen in Casiano's most resembles a jazz ballad where the chef plays with variations of flavorful notes while still maintaining a harmonious presentation. In Casiano's the star of the show is the daily ingredient, the freshest item in the market, which is improvised with freely in the food preparations. In a spontaneous kitchen there are no rules, there is only lots of fun.

Years ago a Spanish gentleman came into my restaurant unaware of our spontaneous cuisine concept. After being seated, the gentlemen seemed annoyed that a menu was not provided and immediately asked the waiter to speak with me. Not knowing that I would create an extemporaneous meal using the fresh ingredients he selected from the list provided, the patron was visibly confused and demanded an explanation. Attempting to provide an excellent dining experience, I explained the concept of the restaurant and that our signature talent is the art of preparing unique, individualized entrees tailored for each specific diner. Pleased with my explanation, I expected the gentlemen to show excitement in his new dining adventure. Incredulously he replied, "Really? You must have some nerve! Serve me something first and then we’ll talk.” That evening was his first visit to my restaurant and the beginning of a long friendship.
