Nicksan is committed to increasing the awareness of the exquisite flavors found in deep-sea fishing species such as grouper and jurel de Castilla. Another fine specimen, the sierra, is a coarse, fatty fish and an excellent choice for ceviche or prepared grilled, pan-fried, or even baked. The ideal pairing for this selection of dishes is Nicksan’s excellent Sauvignon Blanc wine.

When I managed the first sushi restaurant on the Baja peninsula, a Japanese client arrived and approached the sushi bar. He wanted to dine in our restaurant the following day with his wife and friends so long as he could cook the meal. We happily agreed and the next day he began prepping his work area in order to prepare the necessary ingredients for his dinner. At the same time, several other guests were seated and began placing their orders. With the swiftness and attentiveness of an executive chef, he proactively arranged and presented the customers’ orders, tending to their needs for several hours. His heavy involvement in the restaurant’s operations that evening delayed his reservation two hours when he finally joined his party. His expertise in the kitchen was worthwhile; we developed a fruitful friendship and excellent business relationship which led to the expansion of several successful locations.
