My restaurant is in a location where a previous restaurant that I worked for once stood. When it went out of business, I decided to tell the land owner that I was interested in renting his property to start a business myself, but because I did not have any collateral at that time, he said he would have to think about it. A year passed before he finally called to tell me he would agree to let me occupy the space and open my business. Due to the poor conditions of the old building, I completely remodeled the entire space but never paid attention to the grill. One day, a family friend, Wally Albright, who was also a silent movie actor as a child and member of Hal Roach’s Rascals, discovered a grill hidden beneath boxes and supplies and asked me to ignite it. He told me, “I will be here every day eating lobster, fish and shrimp, but I want it cooked here, on the grill.” Since then, it has become one of our signature dishes and we honor him by branding it after his namesake.
