Because the menu at Deckman’s changes daily in a perennial search for the foods of yesteryear, it is difficult to establish which is the most representative of his creations. No matter the selection one thing remains constant, the use of fresh, local ingredients. Aware that globalization and the rapid speed of life in large cities have altered society’s perception about meal selections, Chef Drew advocates the reestablishment of local food traditions. Hence arose his passion for the Slow Food Movement. As head of the Baja California convivium, Drew encourages the use of local, seasonal and sustainably grown produce to counteract the rise of fast food.
When we asked Drew if he could share with the readers an anecdote from his career, he crossed his arms and let out a huge sigh. After some thought, he put his hands on his hips and said, “Wow!” The emotions of a lifetime of memories reflected upon his face and hundreds of untold secrets and incredible stories were hidden in his expression. He treasures his veiled knowledge and holds his memories dear to his heart therefore, he decided to restrain himself.
