In Canada Chef Tadd’s mother managed several demanding restaurants thus her lifestyle was very hectic. When her son decided to settle in Los Cabos she immediately agreed to live here also, picturing a pleasant and peaceful existence at a much slower pace. Who would have thought Los Cabos would be more fun, livelier and busier now that she manages a restaurant, and that she owns too.
Achieving the right balance between American, Asian, and European cuisines can be a complex process. At Habaneros, my objective is to perfect this balance and then transform it into a uniquely Mexican dining experience. The most significant ingredient in my kitchen is infused into every dish: the chile. The notion that chiles are added to food to simply burn one’s tongue is a common misconception. There are many varieties of chiles and each provides their own distinct flavor, aroma, and essence to a dish and not necessarily just heat. For example, I serve a classic New York style cheesecake with a bit of chocolate, Frangelico, and chile chipotle. The result of this modern alchemy creates a surprising dessert, a golden culinary memory, and the diner’s taste buds still intact.
