As a child I had the opportunity to travel throughout Mexico and in doing so, I fell deeply in love with the traditional, native markets found in areas such as Oaxaca, Chiapas, Veracruz, and the Yucatan. The abundance and diversity of fresh produce displayed in those areas inspired me to develop a cuisine that evolves throughout the year coinciding with the seasons and local ingredients.
