As a young sous chef, I recall boasting about my knife handling skills to my friends and coworkers. Just like the infamous peacock, I proudly bragged that I had not once cut myself in the kitchen, a common kitchen mishap among chefs. As fate would have it, I inflicted my first cut that very day. I quickly realized that it is never too late to make a mistake and at some point, all chefs will nick themselves a time or two. Some blunders may cause more pain than others but the lasting impression they leave are essential in developing a good chef to a great one.
