This restaurant harmonizes the brotherhood between the Italian and Baja California peninsulas, highlighting the similarity of flavors from both the Mediterranean coast and the Sea of Cortez. In both regions, the variety of organic products from the earth and the abundant fruits from the sea contribute to the superior culinary traditions that occur at DOC Wine Bar. In addition, some of the best wines in the world also originate from these regions due to the optimal soil, temperature, and weather conditions needed for harvesting grapes.

One day, prior to the first diners of the evening to arrive, the staff and I were deciding what to make for our meal. After several days of eating the same dishes from the regular menu, we grew tired of the same food and fancied something different. It was then that I began to use traditional Italian ingredients such as pasta "al dente" combined with typical Mexican ingredients such as roasted corn or habanero pepper. We liked the dish so much that since then we decided to name it "Spaghetti DOC", a representation of the people who made this restaurant a success.
