In addition, a team of butchers personally section and age the cuts of meat and hand-select one of the favorite ingredients in many of the dishes, the moro crab from Ensenada. Corazón de Alcachofa is an essential part of a collection of gourmet restaurants located in Los Angeles, Mexico City, Guadalajara and Los Cabos.
The restaurant takes its name from a poem written by one of the partners, Gabriel Anaya: Artichoke Heart they call me, but it’s the women’s fault, they tear from me the leaves, enjoy their taste and then go; even without knowing they do me a favor, because they remove the ones that lead the way to a heart; a heart that keeps waiting, to be eaten by the very best.
