When I decided to move to Los Cabos I was determined to find a job, so I distributed my resume to every establishment in town. After a long day of visiting dozens of restaurants, I stopped at Squid Roe on the mere chance they might need a chef. To my surprise, I received a call from Billy Lagarde inviting me to collaborate with his restaurant. My initial reaction was, “Squid Roe? Really?” But with eagerness and an open mind, I met Billy where he made me an offer I could not refuse. Allowing me the freedom to express my creativity and revitalize classical dishes, Squid Roe has become my sanctuary for innovation.
