Rámuri resurrects the ambience and character found in traditional European brasseries, where the spotlight is obviously the beer. Creating its own gourmet beer, some with notes of brown sugar and others with hints coffee or cocoa, the concept merges the best of European traditions with regional products of the Baja. The menu at Rámuri is designed to complement this ancient beverage which, in many instances, is the main ingredient of the dish.

Several years ago I participated in creating the world's largest Caesar salad, certified by the Guinness Book of World Records. At two o’clock in the morning, we began preparing thousands of pounds of lettuce, cheese, croutons, eggs, and various oils and spices for this monstrous project. Weighing over 2.5 tons, this gigantic culinary sculpture required the cooperation and assistance of over 400 people. By 7:00 am everyone was exhausted and desperately wanting to finish. Determining the project was complete and adequate enough to present, everyone finalized their tasks and retreated to rest. As I looked at our design, I was still unsure if we could beat the world record. I knew our project was only half completed and needed more work so marshaling the last bit of energy and stamina, my 30 students and I accomplished the task in only two hours. Can you imagine?
